This recipe is not one of my originals.  I found it someplace on the internet, I don't remember where.  I hope the author does not mind us borrowing it.

Sausage Spinach Pasta

Servings: 1/2




  • 2 Italian sausage links, cut into 1/2-inch slices


  • 1 small onion, chopped


  • 1 garlic clove, minced


  • 1 teaspoon olive oil


  • 14 1/2-ounce can chicken broth


  • 4 ounces uncooked angel hair pasta, broken in half


  • 1 package (10 ounces) fresh spinach, stems trimmed, coarsely chopped


  • 1 tablespoon flour


  • 1/8 teaspoon pepper


  • 3 tablespoons heavy whipping cream



  1. In a large saucepan, cook sausage, onion and garlic in oil over medium heat until sausage is browned.


  1. Drain.


  1. Add broth; bring to a boil.


  1. Add pasta.


  1. cook for 3 minutes, stirring frequently


  1. Gradually a]dd spinach.


  1. Cook and stir for 2 to 3 minutes or until pasta is tender and spinach is wilted.


  1. In a small bowl, combine flour, pepper and cream until smooth.


  1. Stir in pasta mixture.


  1. Bring to a boil; cook and stir for 1 to 2 minutes or until thickened.
