This recipe is not one of my originals.  I found it someplace on the internet, I don't remember where.  I hope the author does not mind us borrowing it.

Potato Nests with Peas

Servings: 1/2



  • 1 cup hot mashed potatoes


  • 1 egg yolk, beaten


  • 1/4 cup shredded cheddar cheese


  • Dash of dill weed


  • 2 teaspoons butter


  • 8 1/2-ounce can peas, drained



  1. In bowl, combine potatoes and egg yolk and mix well.


  1. Stir in cheese.


  1. Separate potatoes into two portions.


  1. Spoon two mounds onto greased baking sheet.


  1. With back of large spoon, shape each into a nest (about 4-inches in diameter).


  1. Sprinkle with dill and dot with butter.


  1. Bake at 350 degrees for 30 minutes or until potatoes are golden brown.


  1. Fill nests with peas. Bake 8-10 minutes more or until heated through.
