This recipe calls for pinto beans but you can substitute the pinto beans with almost any other type of dried beans, so just plug in your favorite dried beans instead of the pinto beans and enjoy.

Pinto Beans ... or ... Any Dried Bean Alternative


Servings: depends on how hungry you are.





-  1 pound bag of dried pinto beans or some other dried beans


enough water to cover the beans in the pot plus one extra inch of water


two or three pieces of Smoked TURKEY necks


-  1 or 2 pinches of salt


2 medium sized bay leaves


-  1 stalk celery, chopped (optional)


-  1/3 cup onion, chopped (optional)


-  1 teaspoon of garlic powder or 1 clove of chopped fresh garlic, (all optional)


1/2 medium sized onion, chopped (optional)


1/2 to 1 carrot skinned and sliced thinly, (optional)


1/2 medium sized green pepper chopped (optional)


-  1 tsp ground oregano, (optional)





          Soak the lentils (beans) for at least 6 hours, overnight is recommended.


          Wash the beans and remove any obviously bad ones.



Cooking Instructions:


Slow boil the turkey necks for 30 minutes before adding the beans to the pot.


While still boiling add the beans, salt any any of the optional ingredients that you chose.


Slow boil everything for another 1 1/2 to two hours, checking the water level and stirring every 15 minutes until the beans are very soft. 


-  Let the water cook down but do not let the beans stick to the pot.
